Harvesting begins at dawn, when the
saffron flower remains closed to protect its delicate stigmas. These are then separated manually in a meticulous process known as
desbrizne, and dehydrated on the same day to ensure maximum aroma, flavour and colour retention.

WHERE OUR SAFFRON IS GROWN
Our
saffron is cultivated in
Blancas, Teruel, in the heart of the
Jiloca Valley—within the renowned “cold triangle” of Spain. At an altitude of 1,100 metres above sea level, this unique setting is defined by extreme temperatures that play a key role in
enhancing saffron quality.
With winters reaching -15°C and summers soaring to 40°C, the plants undergo natural thermal stress, which intensifies the concentration of aromatic and colouring compounds in the
saffron threads.
These demanding conditions, paired with traditional farming and harvesting methods, result in
saffron of unrivalled purity, boasting outstanding aroma, flavour and colour.

HOW TO INFUSE SAFFRON
To unlock the full aroma, flavour and colour of our
organic saffron, it is essential to infuse it correctly. Use around three threads per person, depending on your recipe:
- Choose the right liquid: Water, milk, stock or even wine—select according to your dish.
- Heat the liquid: Warm it gently without boiling.
- Add the threads: Place the saffron in the hot liquid and let it steep for at least a couple of hours to fully release its properties.
- Add to your recipe: Once infused, incorporate the liquid to enrich your dish with saffron’s signature depth and brilliance.
This method ensures your
