The first producers of organic saffron in Spain
Azafrán La Carrasca is a family-run, artisanal business born over 20 years ago from a clear and heartfelt dream: to revive the traditional cultivation of saffron in Blancas — a small village in the Jiloca region of Teruel, where for centuries, the saffron flower was part of the local landscape, economy and cultural identity. We began with just 500 m² of land, guided by passion, patience, and deep respect for ancestral knowledge. Today, that dream has grown into five hectares of certified organic saffron fields, making us true pioneers — we were the first organic saffron producers in Spain.Azafrán La Carrasca is a family-run, artisanal business born over 20 years ago from a clear and heartfelt dream: to revive the traditional cultivation of saffron in Blancas — a small village in the Jiloca region of Teruel, where for centuries, the saffron flower was part of the local landscape, economy and cultural identity.

Supporting the Local Community
We firmly believe in the power of local collaboration. That’s why we not only support nearby growers by helping them sell their saffron through our Traditional Saffron range, but also advise them on cultivation techniques, sharing knowledge built up over two decades.Through talks, workshops and training sessions, we help newcomers explore saffron farming as a viable rural business opportunity — encouraging people to stay in or return to their villages, and helping to combat rural depopulation in our region.
Committed to Inclusion
One of our greatest sources of pride is our social impact. For years, we’ve worked in partnership with organisations such as ATADI (Support Association for People with Intellectual Disabilities in Teruel) and various foundations that support vulnerable groups. Together, we make sure they can actively participate in our saffron harvest. Thanks to these collaborations, saffron becomes not only a crop but also a tool for social inclusion and dignified rural employment.
