Properties of Organic Saffron

We are proud pioneers in cultivating Spain’s first certified organic saffron, grown in the Jiloca region, specifically in the village of Blancas (Teruel). Our fields lie at an altitude of 1,100 metres, in dryland conditions marked by extreme seasonal contrasts: harsh, frosty winters and intensely hot summers. This climatic stress naturally enhances the saffron’s qualities, increasing the concentration of its aromatic and colouring compounds.

The result is saffron of exceptional quality, with a deep aroma, vibrant red colour, and unmistakable flavour. These outstanding organoleptic properties are validated through rigorous analysis and expert tasting. Organic saffron from Teruel (Blancas) is renowned for its high levels of crocin (responsible for colour), picrocrocin (providing its distinct flavour), and safranal (which gives it its unique aroma).
