Our
Traditional Saffron represents a collaborative effort that extends beyond our own lands. We work closely with small-scale local farmers in the
Jiloca region, particularly in
Blancas, who grow
saffron using the same artisan techniques passed down through generations.
Although these smallholdings do not currently hold an official organic certification, we guarantee a natural and chemical-free cultivation process. This ensures that the aroma, flavour, and purity of our
saffron remain intact.
This approach not only safeguards tradition but also strengthens the local economy and ensures that
saffron continues to be a symbol of excellence and pride in our region.
WHERE OUR SAFFRON IS GROWN
Our
saffron is cultivated in
Blancas, Teruel, in the heart of
Spain’s cold triangle, nestled in the
Jiloca Valley at an altitude of 1,100 metres. This unique and challenging environment – with winter temperatures reaching -15°C and summer highs exceeding 40°C – enhances the aromatic, colour-rich and flavourful
qualities of the saffron.
Thanks to this extreme climate and traditional cultivation methods, we produce
saffron of outstanding quality: pure, powerful and rich in nuance. A rare and distinguished product, born of the land and artisanal know-how – ideal for those who demand the best in their kitchen.
WHY CHOOSE SAFFRON THREADS?
Saffron threads represent the highest standard in purity, authenticity and quality. On our farms, each thread is cultivated with care, following time-honoured methods handed down over generations.
Harvesting takes place at dawn, while the flowers remain closed to protect their valuable stigmas. This gentle method minimises exposure to external factors that could compromise the
saffron’s quality. After harvesting, a manual trimming process separates the
prized red threads containing the finest flavour and colour properties.
To ensure maximum quality, the
saffron is dehydrated on the same day it is picked, preserving its full aroma, flavour and deep colour. This meticulous process reflects our passion for tradition and commitment to producing an unmatched
saffron.
HOW TO INFUSE SAFFRON
To fully extract the aroma, flavour and colour of
saffron, we recommend infusing it before using it in your recipes. Here's how:
- Gently crush the threads with your fingers or a pestle and mortar to release their compounds.
- Add the threads to a small amount of warm liquid – water, milk, stock or wine, depending on your recipe (60–70°C, not boiling).
- Let it infuse for 20 to 30 minutes. The liquid will develop a rich golden colour and distinctive aroma.
- Add both the infused liquid and the threads to your dish for full flavour and colour.
Tip: For even greater intensity, prepare the infusion in advance and refrigerate it for a few hours before use.
